The ones that skip it often run food costs all over the map, with no real way to explain why, beyond “ingredients got expensive.”
The other cost of skipping it is operational, not just financial. A menu that hasn’t been engineered for kitchen flow tends to create bottlenecks during service — too many dishes competing for the same station, prep that doesn’t overlap efficiently, and a kitchen that’s working harder than it needs to for the same plate count.
